My favorite meal!

Peanut Noodles


Start off by making the cucumber, red pepper sambal.

Peel, seed and cube up one cucumber

Cube up one red bell pepper

Slice up a bundle of green onions super thin

Toss together
Add in about a half of a cup of rice wine vinegar
I TBSP sugar
I tsp salt
1 tsp red pepper flakes
Mix up and place in the refrigerator to marinade


Next fill your pot with water and let the water boil. while the water is boiling begin to make the peanut sauce recipe below. Once water is boiled add pasta of choice and cook.

Peanut sauce
3/4 Cup peanut butter
1/2 Cup water
1/3 Cup rice wine vinegar
1/3 Cup low sodium soy sauce
1 TBSP fresh grated ginger
2 tsp minced garlic
1 tsp sesame oil
1 TBSP chili garlic sauce
Grind in a about 1/8 tsp black pepper


The consistency should not be super thick nor super thin. If it is too thin add peanut butter. If too thick add a little bit of each one of the liquids listed above. The consistency should look like the picture below when you are pouring it on your pasta.


Drain your pasta. Place the amount you want in your bowl. Next pour the peanut sauce over the noodles and mix around so the sauce is covering all of the pasta. Next get the cucumber red pepper sambal out of the fridge. Stir it up again and scoop it on top of your pasta. Make sure to get some of the juices. All the flavors work really well together. Lastly sit down, eat and enjoy.

The sambal above is enough for about 4 people while the peanut sauce will only serve 2-3 people. I recommend doubling it because it is better to have too much rather then too little and it is also great as a salad dressing the next day:)

P.S. This pasta is also great with grilled chicken on top.

Bruin 4 Life

I can't believe my four years of playing college tennis has come to an end. Time flys when you're doing what you love everyday. Last year my team and I made it to the final 4 and this year we played for the national championship. Even though we came up short and lost in the finals, I could not be more proud of my team. This year the NCAA's took place in Athens Georgia. It was super hot and humid which took time for me to get used to. After defeating Rice and Cal, we had to face our biggest rivals USC in the semi-finals. I will never forget this match for the rest of my life. After a long fight the match came down to me and I was able to clinch. The Bruins were going to the finals! Unfortunately things did not go our way and we fell to Florida. On a positive note, making it to finals was an amazing experience that I will never forget. I will never forget what my team accomplished this season and I will truly miss playing along side all of my amazing teammates. Here are a couple pictures from the trip. Warning: Some of the faces made are very intense... haha.

My Wedding Dress

I bought my dress or should I say my parents bought my dress at Mon Amie bridal salon in Costa Mesa. Just a couple weeks after Alex and I got engaged my Mom and I went there just to look around. Little did I know that I would end up walking out of the store with the dress of my dreams. It was just the second dress I had ever tried on before and it was the one. I randomly went into the bridal salon the day of the Stephen Yearick's trunk show. That was a dream come true since he was the designer of the dress I fell in love with and he was willing to customize it just for me. Anyway here are the before and afters as well as the sketch he drew up for me to approve the measurements and changes before it became customized. It turned out perfect!!!

Recap of my Summer






I have not been on here in forever! But now that finals are over i'm able to update you on my summer. In July I went to Europe with my family. We started off in Paris then took an overnight train to Barcelona and from there we got on a cruise that went throughout Italy. It was amazing.. the only thing missing was Alex. He had to stay home and work. Alex got a job in June at New England Financial. He sells life and health insurance and is also a certified financial adviser. After a 9 month engagement Alex and I were married in the Newport Beach Temple. It was truly the best day of my life and the could not have turned out more perfect. Right after we got married we took a week long cruise to Mexico. It was so fun and I did not want to come home and start school. Alex and I have now been married 3 months and it has been the best 3 months of our lives. We are looking forward to our first Christmas together!

Finally Summer

Today I finished my junior year of college. It's crazy to think that I have already been in college for three years. Time has flown by. I am so happy that I now finally have time to plan my wedding. Yesterday marked 3 months until I marry my best friend.


A couple weeks ago I was at Stanford for the NCAA championships. It was my first time competing in this tournament so I was very excited. Not only excited, I was also very nervous. My team and I had worked so hard and everything was on the line. This is the last tournament of the year and when you lose your done. Fortunately I had my whole family and Alex there to support me! Well.... our hard work payed off and we made it to the FINAL FOUR! We didn't win it but making it to the semis was a huge accomplishment. We beat Virginia in the round of 16. This was probably the most exciting win of my college career so far. The reason for this was that I was able to clinch the match for my team. Next round we played Duke who defeated the Bruins last year. The match was a lot closer but after a long fight we came out with the win! Next were the Florida Gators. Unfortunately they defeated us. They went on to beat Stanford in the finals. It was a blast playing with my team and experiencing the excitement and nerves of the NCAA tournament. Losing was really hard but the good thing is that I have another shot next year to take the title with my team.

As of Latelyyy

So it's official... Our long distance relationship has come to an end and we can't be happier. Alex graduated in economics at BYU in April. I was lucky to have a weekend off tennis and make my first trip to Utah since I transferred. It made me miss my freshman and sophomore years of double dating with our best friends Lauren and Kirk! I flew in thursday night and alex graduated on Friday. It was a great weekend spending time with Alex, my sister Lauren and her hubby Kirk. Not only did alex graduate that weekend, he had a playoff game for the NCAA's and it was Easter. Sadly his team lost so that was kinda a downer but the rest of the weekend was so much fun. He came home a week later and has spent a lot of time with me in LA. I am so happy to have someone to go to dinner with, accompany me to the grocery store and watch red boxes with me. My best friend is officially here forever and I will never have to be apart from him ever again! 
 On May 10th Alex turned 23 so I decided to plan a surprise birthday dinner for him.He loves seafood so I researched some fun places to take him. I used my trusty favorite site yelp to look some stuff up. I came across a place called the Boiling Crab in Korea Town. I drove the whole way and alex had no idea where we were going. We got there around 8 and it was packed. They told us it was going to be an hour weight, but Alex was very pleased with my choice that he wanted to wait. I'm not into seafood too much unless it's sushi but this place was awesome. It was a perfect place for a birthday. We ordered a pound of shrimp and a pound of crawfish. It comes in these bags and you decide the sauce you want on it and things that you want in the bag with your seafood. We decided on a mixture of sauces (garlic and spicy), sausage and corn on the cob. Sounds kinda gross and random but it was delicious! We also got spicy cajun fries. This place was better then I expected and Alex and I will definitely be going back there soon.














On another great note my team and I hosted the first two rounds of NCAA's and swept our opponents 4-0 both days. So right now we are on a huge bus traveling to Stanford for the sweet 16. The seven hour bus ride hasn't been too bad for the fact that we have watched t.v. and indulged in all the baked goods we made for the trip. We play Virginia first round this Friday! I am very excited to be competing in my first team NCAA tournament! My fan base (mom, dad, Mayci and Alex) will be arriving on Thursday to cheer me and my team on to a big victory! When I get around to it I will post our results! Wish us luck:)
